Every course is conceived in combination with a matching tea or wine, a fantastic way of discovering the best vintages. Through the windows of the kitchen, which look out onto the dining area, diners watch in fascination as the chefs prepare food with steamers and woks where Cantonese flavors are fused with French tradition. Langoustines and tofu with leeks in a Chinese hot pot, canard de Challens with Sichuan eggplants, foie gras with the zest of Chinese mandarins – a table of food that fascinates, delights, and inspires me.
